Afterward, we set off on a hike to discover stunning orchids and bromeliads, followed by a trout lunch at a local trout farm. Back home, Rick prepares his take on trout with chorizo. At Rancho Pitaya, Rick enjoys horseback riding to a cactus grove with breathtaking views of the Oaxaca valley, culminating in a picnic featuring grilled tasajo beef, fresh cactus salad, and red chile potatoes.
